Omelet w/ leftover meat

Another after cookout recipe. So again, after a good cookout, save some meat; pork, beef, chicken, etc.

Ingredients:
1/4-Onion(diced)
1/4lb-Meat(diced)
2-Eggs(scrambled)
1/4 cup shredded cheese
Cooking Oil(Olive Oil is best)

Process:
Put oil in frying/sauce pan, saute onions and meat for 3 min. Remove onion and meat combination and set aside. Add more oil in frying/sauce pan, pour eggs in, cook until eggs are firm then add onion and meat combination on 1/2 of the egg, leave enough room to fold the eggs in half. Add most of cheese then fold the egg over making a half-moon shape. Add the rest of the cheese on the outside of the omelet as a garnish.

Serves: 1 Adult

Additional: Serve your omelet with a scoop of hot rice, fills you up! Salsa is a great condiment!
