Shrimp and Vegetable Stirfry

This meal is fairly easy and inexpensive. Again, taste was NOT spared.

Ingredients:
1-Onion(sliced), cost $0.25
1-Bag frozen mixed vegies(defrosted), cost $1.80
1-2lb Shrimp(fresh or frozen but defrosted), cost $5-10
Cooking oil

Total Cost: $7-12

Process:
Heat oil in frying/sauce pan. Add onion, saute for 3min, add shrimp. If shrimp is raw, cook until shrimp's color is orange, 3-5 min. Lastly, add the vegies, 3-5min. Add soy sauce, pepper or salt if wanted.

Additional: served with hot rice, the stirfry is excellent.

Serves: 4-6 Adults

Turkey Kielbasa Sausage in Light Tomato Sauce and Onions

This meal is a very inexpensive recipe. The turkey sausage is fairly healthy and tastes good.
Ingredients:
2-Packs Turkey Kielbasa Sausage(sliced), Cost $2.40 at Walmart
1-Onion(Sliced), cost $0.25
1-Can Tomato Paste or leftover Taco Sauce, Cost $0.40
cooking oil(olive is great)
*Green Bell Pepper and Diced Tomato Optional Vegie


Total Cost: $5.50 Approximately

Process:
Put oil in frying/sauce pan and heat. Add onions let saute for 3 minutes. Add Sausage let cook with onions for 3-5 minutes. Add Tomato Paste and 1 Cup of Water(Thinner). Add additional water as needed to thin tomato paste. Add spices if desired, Mrs. Dash, Garlic Salt, Pepper, etc.

Additional: Add a starch like rice or pasta. This dish over hot rice is awesome!

Serves: 4-6 Adults

Chicken Tacos, Hard Shell











This meal is realtively inexpensive and the kids love it too!

Ingredients:
1-Old El Paso Taco Kits(Wide Mouth), Price $2.50
1-Onion(Diced), Price 25 cents
1-2lb Chicken Breasts or Tenders(Cubbed), Price $3.00-$5.00
1-8oz Shredded Cheese, Price $2.00-$3.00
1-Head Lettuce, Price $1
Coooking Oil(Olive is the Best)

Total Cost: $10.00 Approximately

Process:
Add cooking oil to frying/sauce pan. Heat oil then add onions and chicken, saute on medium heat until chicken is white throughout be sure to break up the chicken into smaller pieces. Add water and taco spice provided in the El Paso Taco Kit or use your own spices. The amount of water you add, depends on how moist you want your chicken to be.


In the meantime, put the taco shells in the over bake at 325 for 6 minutes. Shred half the lettuce, keep the other half for another day.

Plate it, put taco shells on plates, fill in chicken mixture first then cheese, lettuce on top and taco sauce(In the Kit) on top of that. Maybe extra cheese on top of that.

Serves: 4-6 Adults(2-3 Tacos Each)


Additional: Sour Cream and/or guacamole and chunky salsa would definitely add a kick to it. Also, Spanish Style rice is a good starch to go along with your meal. You can make your own or use instant. I will add a Spanish rice recipe some time down the road.

Omelet w/ leftover meat

Another after cookout recipe. So again, after a good cookout, save some meat; pork, beef, chicken, etc.

Ingredients:
1/4-Onion(diced)
1/4lb-Meat(diced)
2-Eggs(scrambled)
1/4 cup shredded cheese
Cooking Oil(Olive Oil is best)

Process:
Put oil in frying/sauce pan, saute onions and meat for 3 min. Remove onion and meat combination and set aside. Add more oil in frying/sauce pan, pour eggs in, cook until eggs are firm then add onion and meat combination on 1/2 of the egg, leave enough room to fold the eggs in half. Add most of cheese then fold the egg over making a half-moon shape. Add the rest of the cheese on the outside of the omelet as a garnish.

Serves: 1 Adult

Additional: Serve your omelet with a scoop of hot rice, fills you up! Salsa is a great condiment!

Fried Rice w/ leftover meat.











After a good cookout, I usually keep the leftover meat to make fried rice for the next morning's breakfast. In this case we had Char Siu Pork, Char Siu is a Chinese BBQ sauce. You can use any leftover meat, the sky is the limit.

Ingredients:
1-Onion(Diced)
1lb-Leftover Meat(Diced)
4-Eggs
4-Cups Cooked Rice
Cooking Oil(Olive Oil is Great)

Process:
Place cooking oil in frying or sauce pan and heat. Add onions and meat, saute for 3 minutes. Add eggs and rice. Fold and mix together thoroughly.

Serves: 4-6 Adults.

Additional: Soy Sauce, Ketchup or Hot Sauce adds a little "kick" to it!
