Turkey and Spinach Fajitas

If you have leftover turkey from Thanksgiving or just from the occassional meal, this is a good recipe for you.

Ingredients:
1-Onion(sliced), cost $0.25
1-2lbs Turkey(diced), cost $0.88lb
3-Handfuls of fresh spinach(diced), cost $1.50
1-Cup cooked rice(white or brown), cost $0.50
1-Pack of small tortillas(20), cost $3.00
Cooking Oil

Total Cost: $8-10

Process:
Heat oil in frying/sauce pan. Saute onions for 3min, add turkey and spinach cook for 3-5min. Add spices as need, Mrs Dash, salt, pepper, etc. Add rice and mix well. Heat tortillas for 10 seconds on hot ungreased frying pan. Place turkey mixture in tortilla and fold.

Additional:
Shredded cheese is a good addition. Sour cream would also do well. However, if you're watching calories the fajitas without extras taste just fine.

Serves:
4-6 Adults(2-3 Fajitas Each)
